  • 2 ripe bananas
  • 1 cup of quick oats


  • 2-4 TBS of peanut butter
  • 1 tsp vanilla
  • 1/4 cup of mix-ins


  1. Preheat over to 350, and line a baking sheet with parchment paper.
  2. In a bowl, mash up the bananas very well. Make sure to break up any larger chunks.
  3. Add in peanut butter and vanilla, if using and stir until combined.
  4. Stir in mix-ins and oats until well combined and smooth.
  5. Take a tablespoon and scoop balls out on to the tray.
  6. When they are all scooped, smooth into circles and flatten slightly with a fork or your fingers.
  7. Put into the oven and bake for 8-10 minutes.
  8. Let cool and package, storing in the refrigerator.
