2 Ingredient Pina Colada Popsicles

bag of frozen pineapple
can of full fat coconut milk
as needed (juice, milk, rum)
Pulse 1 cup of frozen pineapple in a high speed blender. I left mine a little chunky but smooth - you could process until totally smooth if desired. Remove and set aside.
Add the rest of the pineapple and the can of coconut milk. Blend until smooth adding liquid if needed.
Once smooth, spoon a small amount of the coconut milk mixture into the bottom of your ice pop mold. Alternate between a larger scoop of the coconut mixture and a smaller of the pineapple mix to create pretty layers.
Allow to freeze until solid before enjoying!
- You may need some liquid for this - I used a few splashes of cashew milk but any milk, juice, or water will work. Orange juice or pineapple juice would be great.
- In place of liquid, you could add in rum if using. Make sure not to use too much as the popsicle does have natural sugar and fats which won't freeze as solid. Using too much alcohol could prevent it from freezing properly.
- If you don't want to make layers, pop everything into the freezer at once and blend, then freeze.
