Chocolate Spinach Cookies

Chocolate Spinach cookies are so decadent, no one will know they're better for you. Packed with whole grains, healthy fats, and even a little veggies, you can even eat these for breakfast. This spinach dessert is perfect any time of day and super simple to whip together.

Ingredients

  • 4 tablespoons coconut oil melted
  • 1/2 cup spinach puree
  • 2 eggs
  • 2/3 cup maple syrup
  • 1 cup flour
  • 1 cup old fashioned oats
  • 1/2 cup oat flour
  • 2/3 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 heaping cup of dark chocolate chips or more to taste

Instructions

  1. Preheat the oven to 350.
  2. In a large bowl, combine together the dry ingredients. Set aside.
  3. Whisk together the wet ingredients until well combined.
  4. Fold the wet into the dry ingredients until just combined, being careful not to over mix.
  5. Scoop onto a cookie sheet lined with parchment paper using a large spring-loaded cookie scoop.
  6. Bake for 10 minutes. The centers will be just set and might look underbaked.
  7. Cool for 5 minutes on the cookie sheet before removing.
