Welcome to the last WIAW of the year! Woah, kind of trippy when I think of it that way. Does anyone else get that way the last week or so of the year? Suddenly the most benign things are the “Last XYZ or 2015!” which makes them kind of exciting, I suppose. On the bright side, I find even the most average What I Ate Wednesdays exciting (it’s one of my favorite posts to write each week!) so whether it’s the 20th or the final one of the year, I’m excited to be here with you all, sharing a full day of eats.
This week’s WIAW was documented on Monday. (aka, the last Monday of 2016! See what I mean? much more interesting.) Monday was a looonnggg day, because for the past week or two Ryan’s been off his sleeping game. Even though he HAD been waking up only once a night for just a few minutes once or twice a week, the past few weeks he’s been up multiple times, for extensive lengths of time each night, then waking up late, (8-8:30) taking shorter/later naps, and then not falling asleep until 8 or 8:30. I blame the holidays and my birthday excitement getting him all weird, but either way if it doesn’t sort itself out, I think we’ll have to figure out a way to get him back on track. ALL OF THAT to say that we went to bed at 11:30 or 12 on Sunday and Ryan was up just after 12:30. Until 3:30. So that was fun. (Then Cooper needed to go out at 4:30. Really dude?) So I was tiiiireeeeddd. Which makes for some weird food choices (mostly dinner, because I was too tired to decide food.) in Morgan Land.
Breakfast: I made my brother granola (maple-brown sugar almond, if you’re intrigued) for part of his Christmas gift and there was a ton so we have a small container laying around. I threw some on top of some yogurt along with some mini chocolate chips (also leftover) as breakfast. Nom. Lunch: Have you ever had an insatiable need for some greens? After baking allthecookies for my brother and obviously taste testing a bunch, I felt the need. When I was at the store, I was lucky that spring mix was on sale, and picked some up because I legit made the most delicious salad of my life. This one had half a tomato, some finely diced onion, half an avocado, Spanish olives, roasted red pepper, bell pepper, banana pepper, a chopped clementine (<– TRY IT.) some peas and corn, cannellini beans, chickpeas, shredded parm and an easy red wine vinaigrette. Vinegar-y things are one of my biggest cravings, and this one hit the spootttt. I want it again, right now.
Dinner: I couldn’t decide what to eat, so I had a weird modge podge of food, mostly whatever I was making for Ryan. Some random steamed veggies with salt, pepper, garlic powder, lemon, and parm, the other half of that avocado from lunch, some roasted sweet potatoes with ketchup, and bacon. Weird, but it worked!
Dessert: Okay, even though I was in need of some vegetables and vitamins, this hot cocoa packet my dad stuffed in my stocking was calling my naaameee. So I made it. Worth it.
