If you love cheesy pizza, this is the recipe for you – pepperoni stuffed crust pizza is simple and delicious. Your favorite, gooey, cheesy meal with the added twist of a crust stuffed with cheese and pepperoni, you’ll never need to order in again.
It should be no surprise by now that I love pizza. If I were on a deserted island, I’d want a good book, a pint of cookie dough ice cream, and a margarita pie from Krispy Pizza. (yeah, I know the ‘K’ makes you think the place is a joke, but seriously the best pizza I’ve ever had.) How I’d make that work on a deserted island, I’m not sure but whatever.
Here’s the thing about pizza – even bad pizza is still pizza. I mean, put sauce and cheese on something carby and I’m game. This is the mindset that led me to loving cheap, national chain pizza in college.
You see, the local one had this deal where you could get 2 medium 2 topping pizzas for $10. And while that probably could have fed a few people, I would order it with my roommates or my college boyfriend and inhale an entire pizza. Because that’s what you do in college, or something like that. I don’t know, I wasn’t super into the whole partying scene, so that was about as wild as I got.
All of that to say: I have a soft spot for that style of pizza, even though I was born and raised in NJ, and everyone knows that NY and NJ have the best pizza, hands down. I won’t even eat it out of state unless I can have someone from the tri-state area verify that it’s a good spot. I take it pretty seriously. But something about that ridiculously doughy, extra cheesy pizza does it for me. To be fair, I haven’t ordered one in well over 4 years, but every once in a while, I’m occasionally tempted.
It was a commercial for one of these chains that prompted this post and as soon as I made it, I felt like I had found the holy grail. Cheese? Check. Sauce? Check. Carbs? Check? Oh, and did I mention the crust stuffed with CHEESE and PEPPERONI. Yeah. It’s good, you guys. And stupid simple.
Pepperoni Stuffed Crust Pizza
Shredded mozzarella cheese
4-5 mozzarella cheese sticks
8 slices of sandwich style pepperoni
1 cup of pizza sauce
1 pound of pizza dough
Preheat your oven to 450. Cut all of your cheese sticks in half, set aside. Roll out your dough into a big circle, about 4 inches wider (2 on each side) than you want your end pizza to be. I used refrigerated dough from my grocery store, but you can use homemade, obviously. Transfer to your baking pan.
Spread your sauce in a circle on the center, leaving 2 inches or so all around. Wrap each cheese stick half in a slice of pepperoni and place them where the sauce and dough meet. Stretch and wrap your extra dough around the cheese sticks, tucking the extra dough under.
Top with cheese and any desired toppings. (I used about half of a block of mozzarella I shredded.) Bake as per the instructions on your dough’s packaging (mine was about 10-12 minutes) Allow to sit for a few minutes before serving and enjoy!
Note: If you’re looking for a SUPER cheesy crust (like stringy gooey cheese) try cutting up a brick of mozzarella into finger sized sticks. The string cheese – while simple and delicious – doesn’t get super stringy and gooey, though I didn’t mind at all.
If reheating, toss a slice or two into the over for a few minutes or in a pan on the stove. Never microwave pizza, people.
