Hello, friends! First and foremost, thank you all so much for your sweet comments on yesterdays post. I’m so excited to be able to share this journey with you and fill you in on what’s been going on in babyland. Hopefully, this explains we’re WIAW’s from the past! (like this, this, this, this..) Remember that time I made shrimp cocktail for no reason? Oh, there was a reason.
Thankfully, my stomach seems to have figured itself out so I’m welcoming veggies and normal food back into my life. Though I did wake up Tuesday with the cold to end all colds (Alex is rolling his eyes – I’m a slight exaggerator) so now I’m on tea and chicken noodle soup and comfort food in hopes of feeling a little better. But anyway, let’s get on to Monday’s eats for WIAW!
Breakfast: Life cereal! I’ve been craving cereal so I forced Alex to buy me a box last weekend and I’ve been savoring it. Also, does anyone else eat cereal this way? I have for as long as I can remember. I really hate when cereal gets even a little soggy, so I let each bite sit in the milk just long enough to scoop up some milk and then munch away.
Lunch: I told you guys on Monday that last weekend we went to an amazing Puerto Rican restaurant and I went home with leftovers. At the restaurant both Ryan and I were obsessed with the Spanish rice that came with everyone’s meals, so I took everyone’s leftovers and my leftover entree home. For lunch I made a “Puerto Rican fried rice” with them. It was rice and pernil (roasted pork covered in onions and garlic, oh my God, so good) and amazing. It was one of those things where you look at it and you’re like, oh man, this is a lot of food, I’ll have some leftover for later!, but then it’s so delicious and the next thing you know there’s nothing left in the bowl. #noregrets
Dinner: This week I’m trying to clear out all the food in our fridge so I’ve been making mish mash meals that have been turning out shockingly AMAZING. (My first trimester I was SO sick so I would get random food and eat it once and not want it again. Into the freezer/pantry/fridge it would go. Now that I’m feeling better, I need to get it all in check so I’m more aware of what food I actually have) For dinner I made a shrimp garden salad with tomato, cucumber, carrot, roasted red pepper, Parmesan cheese and a homemade red wine vinaigrette. (Used this recipe loosely) SO DAMN GOOD. Also, almost all of my meals look like this, with the company of a cat, half asleep.
Dessert: It was chilly and I was feeling the beginnings of this cold that night, so I decided I wanted a mug of hot chocolate. (2 TBS cocoa, 1-2 TBS sugar, 1 cup milk of choice, pinch of salt = single serving hot chocolate. You are so welcome.) Probably wasn’t my best move because dairy + sinuses = apparently not good according to science, but all of my cares have floated away. Served in a mug from my alma mater, where I acquired this mug and a ton of debt.
