In Kindergarten, we had to a concert for the parents in the Spring. For whatever reason, one of the songs that they chose was The Rainbow Connection and my dad fell in love. For over a year he made little 6 year old me sing that song. It was the song we danced to at my wedding and to this day, rainbows remind me of my dad and that silly Kermit the Frog song.
Now I have kids of my own who come home singing random songs – Ryan’s recent favorite is the Monster Boogie – and I’ve sang the Rainbow Connection to both of them more times that I am willing to admit.
But these days when I’m talking about rainbows, I’m usually talking about convincing the boys to eat something other than cheese and noodles. As any mom will tell you, getting your kids to eat healthy, well rounded meals can be a .. challenge, to put it lightly.

If you’ve been a follower for some time, you probably are aware how much I adore Halloween. I’ve always been the one to start planning for Halloween in July (okay, fine, I may or may not start planning even before that. So sue me.) which is kind of how these little mummy snacks came about.
I was perusing the Halloween side of Pinterest (AS ONE DOES IN JULY, DON’T JUDGE ME ;)) and I saw these super cute mummy dogs pop up again and again. Problem is, for the most part, my kids aren’t huge hot dog fans. Blame my husband who ‘makes’ them eat artisanal, gourmet sausages, but hot dogs aren’t big in our house.
So, you may have noticed by now that I really, really love Halloween. I started planning posts back in April. I used to plan my costume out a solid 4 months ahead. I have a Halloween Pinterest board that is ridiculously large. I get heart palpitations when Target FINALLY puts out Halloween stuff in the Dollar Spot.
I’ve basically been waiting for the past 10 years to be able to go full blown Halloween once I had kids.
And now, here we are – Ryan is officially a preschooler and I can go full-on Halloween Queen. Starting with fun lunches for him to bring to school!
