What I Ate Wednesday: Normal Weekday Meals

Happy Wednesday, my friend! PS I totally just wrote Monday? No idea why. Right now my house is a hot mess – I’m cooking and baking and making up a storm since Alex is back to working at night this week. It feels goooooddd.  I love spending time with my husband, but I also love alone time. It’s in my nature and when I don’t get it I get cranky.

So that means right now my house smells like caramel corn and yeast and my hands are covered in glue and construction paper and my soul is happy. It’s the little things, isn’t it?

Sadly, because I’ve been busy doing all of this randomness, I haven’t found the time to pause long enough to photograph this crazy awesome cranberry sauce I’ve been looking at – maybe later this month, which is obviously too late for Thanksgiving.  BUT if you’re looking for an AWESOME recipe for cranberry sauce, see below!

1 bag of fresh cranberries
.5 cup orange juice
2 TBS lemon juice
.25 cup grapefruit juice
.5 tsp lemon zest
.5 tsp grapefruit zest
3/4 cup (more or less) sugar

Add everything into a pot and bring to a boil. Boil until all of the cranberries pop and then reduce heat to low. Simmer until thickened (use your judgment, I like it very thick so I think I went about 20 -25 minutes.) Serve warm or refrigerate overnight. Enjoy!

And to offset my lazy bones recipe sharing, let’s celebrate Wednesday in our favorite way –What I Ate Wednesday!

Breakfast: Unpictured, but coffee (always) , homemade rolls (experimenting!) and yogurt with the afore (am I even using that right?) mentioned cranberry sauce – YOU GUYS the best decision ever = cranberry sauce on yogurt.

Lunch: Funny story – I tried to go all Pinterest mom and made Ryan a quesadilla and cut it with a cookie cutter to make it festive and then decided I wanted the same thing. I really should have taken a picture of Ryan’s since it came out better but it was still tasty. Quesadilla with cheddar + refried beans, half of an avocado with lemon, salt, garlic powder, and salsa.

Snack: By some miracle, I got Owen to take another, early nap DURING Ryan’s nap and after I knocked off some quiet to-do lists tasks, I had no idea what to do with my time! I made myself a giant ‘latte’ -> milk warmed and whisked until hot and frothy on top of a dissolved packed of dark Starbucks VIA instant coffee. Not gourmet but SO good! Side note, how freaking cute is this mug I picked up at TJ Maxx the other day? The inside says I’m and the outside says Yours and it makes me want to sing that Jason Mraz song all day long.

Dinner: I bought a bunch of stuff on Friday for make dinner and lunch with over the weekend with plans to stick close to home but you know, life got in the way (how dare you life!) and Alex decided he wanted something different for dinner (fine by me since I was sick) so I had a full ‘fancy’ dinner ready and waiting to be made on Monday. So dinner was meatloaf + mashed potatoes + glazed carrots and omg why don’t I do this more often? I always feel silly making a ‘real’ dinner on weekdays since Alex is at work but I’m kind of regretting it! (except, you know, the time+dishes quickly reminded me why, ha!) Also, funny story: this is the plate I made for Ryan. I realized when i was about to give it to him that it was way, way too much food for a toddler so I ate this plate and made Ryan a more reasonable one, ha!

Side note: this is what my house looks like at meal times. Owen covered in food (mashed potatoes here) and Ryan doing.. I have no idea what.

Dessert: A bowl of cereal! Omg, you guys, I can’t tell you the last time I bought a box of cereal? I got this box of Honey Bunches of Oats + strawberries through influenster (<– this program is open to EVERYONE, not just bloggers! Definitely check it out, I occasionally get some fun stuff!) and it’s so, so good! Mine was bananas, yogurt, mini chocolate chips, and cereal, with a side of Gilmore Girls.

    omg i love cereal for dessert–thats the only reason i buy cereal now! I’m loving the mashed potato body scrub that Owen has got going on hahaha
